Si vous savez (mais comment savoir ?) que les canards sont de bonne origine, n\u2019h\u00e9sitez pas. <\/p>\n<p>M\u00e9fiez-vous des mentions tels que : \u00ab Tout venant \u00bb, \u00ab origine pays de la communaut\u00e9 europ\u00e9enne \u00bb ou encore les \u00e9tiquetages promotionnels qui cachent l\u2019indication de l\u2019origine !<\/p>\n<p>Sinon \u00ab alea jacta est \u00bb &#8230; <\/p>\n<p>Ce jour-l\u00e0 j\u2019ai pr\u00e9par\u00e9 quatre canards entiers et une douzaine de magrets fum\u00e9s&#8230; ! Elles iront aux rillettes<br \/>\n&#8211;\tLe gras. Il servira au confit, aux rillettes et finira en grattons.<br \/>\n&#8211;\tLes cuisses. Elles seront confites.<br \/>\n&#8211;\tLes m\u00e2chons. Comme les cuisses ils seront confits.<br \/>\n&#8211;\tLes magrets. Ils seront soit confits  soit fum\u00e9s.<br \/>\n&#8211;\tLes aiguillettes. R\u00e9server le gras fondu. Ce n\u2019est pas gras ! Le gras est rest\u00e9 dans le bassine. Les mettre dans une grande jatte, saler, poivrer et arroser d\u2019un demi-verre de cognac, ou d\u2019un autre bon alcool. <\/p>\n<p><a gras pr\u00e9alablement fondu.<\/p>\n<p>Lorsqu\u2019on les pique il ne doit plus y avoir de sang qui sorte de la piqure. <\/p>\n<p>Le confit va continuer de cuire pendant  la sud-ouest, on mettait les morceaux de canard confits dans une jarre en gr\u00e8s et on recouvrait compl\u00e8tement de gras de canard souvent compl\u00e9t\u00e9 par du saindoux.<\/p>\n<p>Il suffisait  d\u2019aller chercher les morceaux avec la main au fond de la jarre et bien veiller \u00e0 remettre le gras par-dessus les morceaux restant, pour les pr\u00e9server du contact de l\u2019air.<\/p>\n<p>La st\u00e9rilisation est quand m\u00eame plus simple.<\/p>\n<p>Je st\u00e9rilise pendant 2 heures d\u2019\u00e9bullition.<\/p>\n<blockquote><p>Les rillettes de grand faitout  les carcasses de canard avec<br \/>\n&#8211;\t \u00bd litre de vin blanc.<br \/>\n&#8211;\tUn oignon piqu\u00e9 de trois clous de girofle.<br \/>\n&#8211;\tUne branche de persil.<br \/>\n&#8211;\tUn vert poireau.<br \/>\n&#8211;\tUne grosse carotte.<br \/>\n&#8211;\tLaurier, thym, romarin.<br \/>\n&#8211;\tSel<\/p>\n<p><a r\u00e9cup\u00e9r\u00e9e et la mettre \u00e0 griller l\u00e9g\u00e8rement dans le gras restant du confit.
